TAMARIND SEED GUM

Sourced from Tamarind, has good water binding / emulsion properties. It is used as a replacement for emulsifiers & stabilizers in ice cream.

Tamarind Seed Gum is a plant based natural texture solution to enhance mouthfeel, structure and stability throughout processing and shelf life

Applications include ice cream, frozen desserts, sauces, dressings, beverages (including acidified).

Tamarind tree is native to Africa and is popular in Indian subcontinent. It’s also grown in South America and tropical parts of Australia and North America.

Tamarind fruits/pulps are used for fresh consumption and popular in South Asian cuisines.

It is also used in juices, sauces, jams, beverages, Ice Creams and syrups.

 

Replace stabilizer blend made of Cellulose Gum, Guar Gum, Carrageenan, and Monodiglycerides

- Less ingredients on the label for similar sensory and functional attributes

Stabilize emulsions 20% O/W emulsion with 0.5% Tamarind Seed Gum

Functions well in plant-based creamers

 

Tamarind Seed Gum is useful in making Jams & Jellies

JAMS and Jellies can be made by cold process.

Useful in making SUGAR FREE formulations using artificial sweeteners in place of Sucrose
